Rossini red wine
Grapes:Cannonau, Cabernet Sauvignon
Colour: deep ruby red with garnet nuances.
Bouquet : intense, ethereal, marked presence of red fruits such as ripe plums, cherries, as well as blackberry and currant berry jam. There are also tertiary hints of spices with hints of turmeric, black pepper, vanilla, leather, cocoa, tobacco. Taste: full and soft with velvety and well harmonized tannins, long and fruity finish.
Pairings: It traditionally goes well with grilled meat, braised meats and game as well as aged cheeses

Harvest Period End of September – beginning of October.
Vinification and Maturation The bunches, harvested by hand, are pressed and fermented at a controlled temperature for about 10-12 days, paying attention to the extraction of aromas and colour, to the management of tannin aimed at sweetness and elegance.
Refinement Once the skins and the wine have been separated, refinement began in steel tanks for about eight months before moving on to oak barriques, where the wine aged for 12 months, after which it enjoyed a further rest of 6 months in bottle. To ensure maximum respect for its natural characteristics, this wine is not clarified or filtered: any residues are a symptom of its integrity. Service temperature 16-18° C
